Finally found my recipe for Banana Bread! This one is neat because you add cinnamon and nutmeg. My mom got this recipe back in the 60's in Panama. I have never seen it in a cookbook or on line We modified the recipe over time - originally 1 cup of fat and 1.5 cups of sugar.
1/2 cup of shortening
1 tsp baking soda
4 T buttermilk
1 cup sugar
1.5 cups plain flour
1 tsp cinnamon
1/2 tsp nutmeg
2 eggs
1 cup nuts (pecans or walnut) chopped
1 tsp vanilla
3 very very ripe bananas (mashed)
Cream shortening and sugar together , add eggs and beat
Add nuts
Sift dry ingredients in separate bowl then add to bowl and mix
(flour, baking soda, cinnamon and nutmeg)
Add buttermilk, bananas and vanilla
Pour into a greased loaf pan
Bake 350 degree oven for 1 hour
